Going green


Living in Seattle where everyone seems to be "green" I have started doing more to help the enviroment. I compost and recycle and I carry my own shopping bags everywhere with me. I love the mesh produce bags that I found at Whole Foods, but only have two of them because they are$1.19 a peice. I was looking at Dollar Tree the other day for some mesh laundry bags and I found these Blink bags. They will work perfectly for produce! Four in a package for $1 is a bargain! I will let you know how they hold up.

Salmon cakes

2 cups cooked salmon (I had some left over from the weekend)
1/4 cup sour cream
1/4 cup plain yogurt
1 egg
1 cup plain bread crumbs
salt and pepper to taste
1 T dry mustard

Mix until barely moistened, form into patties and press into pamko bread crumbs. Cook in a frying pan with just a few tablespoons of oil until golden brown.

I served it with the leftover cucumber sauce from the pitas the other night with some dried dill stirred in.

Sesame Salad

2 packages thin spaghetti
1 bottle Asian Sesame Ginger Dressing (I used Newmans Own brand)
2 orange peppers
1 english cucumber
1/4 cup sesame seeds

Boil pasta until just al dente, drain and place in a bowl. Add most of the bottle of dressing and the sliced vegetables. Mix well. Spinkle with the seeds and chill.

Greek turkey meatballs

I made these tonight for dinner, they were a hit! Next time I will have to double the recipe.

1 package ground turkey 1 1/4 pounds
4 cloves garlic pressed or chopped finely
1 T oregano
1 t cumin
1/2 t cinnamon
salt and pepper
Mix well and form into meatballs. Layer in the bottom of a crock pot sprayed with non stick spray, cook on low 3-4 hours until fully cooked.

Cucumber sauce
1 cup plain yogurt
2 cloves garlic pressed
1.4 cup grated cucumber
salt and pepper to taste
dash of Accent seasoning
1 t oregano.
Mix well and chill.

I made home made pita bread, but use any kind you want. I made the pitas with the meatballs and sauce and also stuffed in some romaine lettuce and chopped cucumbers.
