Apple Pie Squares

This the only pastry crust that I have ever been able to make with any success! My mom found this recipe in an old cookbook. I have substituted berries and peaches with great results, leave out the cinnamon if you use berries.


Apple Pie Squares
4 cups flour
1 tsp salt
1 2/3 c butter
½ c water
1 egg
1 Tbsp vinegar

Mix together to form crust
Roll out ½ of dough to fit in jelly roll pan

Filling: 12 apples peeled and sliced
2 cups sugar
1/8 tsp nutmeg
2 tsp cinnamon
2 Tbsp flour
2 Tbsp lemon juice

Mix together and put in crust. Then put another layer of crust on the top.
Bake at 350 for 60 minutes , then drizzle with glaze.

Glaze: 4 Tbsp butter
1 ½ cups powdered sugar
3 Tbsp lemon juice

Crockpot Dinner Party

I decided to have some friends over for a dinner last night. It was great to spend some time with them! I cooked all the main parts of our Mexican meal in the crock pot. I love my new one!

Salsa Chicken

2 pounds chicken
1 cup salsa

My chicken was frozen so it took about 3 hours on high to cook.

Beef Brisket Enchilada Style
4 lbs beef brisket
2 cups red enchilada sauce

Salt and pepper the beef, cover with sauce. Cook on low for 8-10 hours until the meat shreds easily.

Pork Barbacoa (Sweet BBQ Pork)
3 lbs pork roast
1 cup red enchilada sauce
1 cup brown sugar
1 small can dice green chilies

Salt and pepper pork roast, cook on high for 4-6 hours until tender. Shred meat removing and excess fat. Add the sauce, sugar, and chilies and cook for 1 more hour.

Crockpot pudding cake~from scratch
2 1/4 cups all purpose flour
1 2/3 cups sugar
1/2 cup oil
1 1/2 cups water
1 1/4 t baking soda
2/3 cup cocoa
1 t salt
1 t vanilla
1 t baking powder
2 eggs

Mix everything together in a mixing bowl and beat for 2-3 minutes until fully combined. Pour into greased crockpot.

Mix
1/4 cocoa powder
1/2 cup brown sugar
Sprinkle over the top of the cake
Pour 1 1/2 cups hot water over the cake.

Cover and cook for 2 hours on high.

Crock pot pudding cake

1 cake mix prepared according to directions on box
1 small box pudding
4 cups of milk

Prepare the cake mix and pour into crockpot. Mix milk and pudding together and pour over the top of the cake. Cook for about 2 hours on high.
I used a dark chocolate cake mix and chocolate pudding. I think that you could make this cake a lot of different ways!
